Tasty Tuesday

Cheesy Bacon Wrapped Shrimp and Grits

Ingredient List:
24 shrimp, thawed and peeled
6 slices of turkey bacon, cut in thirds
Nonstick cooking spray
2 cups milk
12 spears of asparagus, cut into small pieces
2 scallions (white and green parts), sliced thin on the diagonal
¼ cup quick-cooking grits
½ cup shredded cheddar cheese
1 tbsp butter
Salt and pepper for taste


Directions:
  1. Wrap each shrimp with a piece of turkey bacon, securing bacon with toothpick.
  2. Heat large cast iron skillet over medium heat.  When the skillet is hot, spray it generously with cooking spray.  Add the bacon wrapped shrimp and cook until the bacon is crisp and shrimp are cooked through, about 3 minutes per side.
  3. Meanwhile, bring milk, milk, asparagus and scallions to a boil in a medium saucepan over high heat. Whisk in grits and reduce heat to low. Cook, whisking constantly, until grits are tender, about 5 minutes. Then whisk in the cheese and season with salt and pepper.
