Christmas Breakfast

Bacon/Sausage, Egg and Cheese Toast Cups

  • Prep Time 15 minutes

  • Total Time 35 minutes

  • Yield Makes 6

  • Ingredients

    • 6 tablespoons unsalted butter, melted
    • 8 slices white or whole-wheat sandwich bread
    • 6 slices bacon
    • 6 large eggs
    • Coarse salt and ground pepper
    We also did 6 with ground sausage and added cheese :)


    1. Preheat oven to 375 degrees. Lightly butter 6 standard muffin cups. With a rolling pin, flatten bread slices slightly and, with a 4 1/4-inch cookie cutter, cut into 8 rounds. Cut each round in half, then press 2 halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup. Use extra bread to patch any gaps. Brush bread with remaining butter.
    2. In a large skillet, cook bacon over medium, until almost crisp, 4 minutes, flipping once. (It will continue to cook in the oven.) Lay 1 bacon slice in each bread cup and crack an egg over each. Season with salt and pepper. Bake until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately.

    Being a good friend

    In elementary school, being a good friend was sitting together on the bus, eating lunch together, and sticking up for them.
    In middle school, being a good friend was sitting together on the bus, eating lunch together, sticking up for them, not liking the same boys, disliking the same girls, and sleepovers.

    In high school, being a good friend was sitting together on the bus, eating lunch together, sticking up for them, not liking the same boys, disliking the same girls, sleepovers, playing on the same sports teams, taking the same classes and the same extra curricular activities.

    In college, being a good friend was going out for drinks and dancing, not liking the same boys, disliking the same girls, living in the same dorm or being roommates, taking the same classes and the participating in same extra curricular activities, being in the same sorority,

    As an adult I am struggling to figure how to be a good friend...

    Most days after work, the gym, dogs, and dinner I feel like I barely have time to ask Mark how his day was. How can I possible keep up a great friendship with all the people who have come in and out of my life the last 29 years?

    I love my friends and try to do everything I can to make sure they know that I love them, and would be there for them if they needed me, but I constantly wonder if it is enough?

    Big and small things come up daily as an adult and if I only catch up with someone monthly I may miss something.

    What makes a good friend as an adult?
    • Calling one a week/month to catch up?
    • Occasionally "liking" or commenting on their status and pictures on facebook?
    • Mass emailing with general family updates?
    • Calling or texting on holidays?
    • Having an hour lunch once a month?

    Thank you!

    This Thanksgiving I am thankful for so many things. 

    1. This is a picture of all the Kellys (and Jacksons) outside my parent's house where we spent Thanksgiving with my mom, dad and brother, Mike. It was so nice to be all together and eat such yummy food!

    2. The wonderful men hard at work on Saturday at our new house!

    3. My family...Mark, Opie and Jax make me laugh, smile and keep me on my toes at all times.

    4. The safe arrival of Walker Britt Bearden. My best friend, Meredith had this cute little nugget on Friday.

    I am also thankful that she said it wasnt that bad and that epidurals are now on a drip and cannot run out :)

    Born on November 25, 2011 to my best friend Meredith and her husband Zach. He was 8 pounds 1 oz and 21.25 inches long.  Mark and I drove down on Saturday and spent about 3 hours with the new parents and baby.

    Baby baby baby...

    Meet Lucas. My college best friend Rachel and her husband Daniel welcomed this little guy on Halloween. I got two spend two hours with Lucas and his proud parents today, it was so amazing holding him, he is so tiny.

    I am patiently awaiting the arrival of my high school best friend Meredith's little boy, he is due 11.28.2011!!

    Going to the chapel and we're going to get married

    My older sister is getting married on SATURDAY! I am so excited to head up to NYC on Thursday and to CT on Friday for the wedding festivities.

    We are leaving around 6:00pm on Thursday night and headed to NYC, where Kelly and Mike (soon to be brother in law) live. We are arriving around 8:00pm and will meet them out for dinner and drinks. I am looking forward to seeing my friends Marie and Derek while in the city too. Friday is a big day of pampering, we have breakfast, mani/pedis then a haircut and blow out, lunch, train to CT, rehearsal and rehearsal dinner.

    This is my first blow out experience and I am pretty pumped about it, pictures to come. I am so nervous about my bridesmaid toast on Friday, at rehearsal dinner. I am a terrible public speaker, I hope that it goes well and everyone laughs :) wish me luck.

    Saturday will be a lot of pampering too, hair and make up beginning at 9:30am and the wedding at 2:30pm with the reception beginning at 5:00pm.

    I am looking forward to spending some quality time with the Dries girls but also see all of my extended family and close family friends.

    Can't handle my hangover

    Friday night I stayed up until 4:00am drinking wine chatting with old friends (after drink beer while playing beer pong) and spent most of the day on Sunday laying on the couch in agony...tired, nauseous, with a migraine, etc.  I don't know why I think I am 21 or better yet 18 and can handle this. Clearly, I cannot.

    I did however get myself up, showered and dressed around 5:00pm and headed out for the night to party it up for a girlfriend's bachelorette party. I stayed out until 2:00am on Saturday night but only had 1 drink and about 6 Excedrin Migraine pills.

    Why am I in denial about my age and/or drinking abilities?

    Fat looks better brown

    I came home from work, changed into my work out clothes and headed for the gym. I left my house at 5:30pm and was going to take Group Power at 5:45pm. As I was driving out my me neighborhood I realized I forgot my water bottle. Instead of going back home and getting it or like other gym patrons using the water fountain I decided since I did not have by water bottle I would spray tan instead of working out.


    I need motivation to get to the gym...apparently looking at my fat ass in the mirror is not enough...

    It's my blog and I can cry if I want to...

    I want a baby, it’s not a secret, well maybe it is a secret because I don’t wear a sign or shout it from the
    rooftops but nonetheless I want a baby. I don’t want one today or tomorrow or even 3 months from
    now but someday I want a baby (or 2 or 3).

    It seems like all my female friends within child bearing age are pregnant and I can’t help but feel a little
    jealous, like I was invited to the party. I know this is completely irrational because I don’t want me be
    invited right now but I am still envious (better word than jealous).

    Don’t get me wrong, I am overjoyed for all of my friends who are mothers and expecting mothers and
    I am so happy that they share the news with me and tell me about all the funny and gross things that
    come along with motherhood.

    The journey begins...

    Today Mark and I signed the papers and paid our earnest money to break ground on our new home. It has been less than 2 months since we decided to buy a new home, even less time since we decided a new home was the right way for us and now here we are. I am so excited and a little overwhelmed about the whole thing, but I know its the right thing for us (and our future family). The picture below is of the model in Waxhaw that is the same floor plan we are going to build.

    Mark and I celebrated 3 glorious years of marriage yesterday... it's crazy how time flies when you are having fun.

    Our wedding day was one of the best days of my life to date and I would do it all over again every year if we could afford it.  This is my favorite picture from our wedding, the "dip" at the end of our first dance.

    My GREAT friend Carrie Lou ( gave us dance lessons, as our wedding present, so we did not look like we were at the 7th grade dance....

    Breakfast smoothie

    1/2 cup water
    1 spoonful sugar
    2 cups crushed ice
    1/4 cup milk
    1 cup sliced up strawberries
    Add all ingredients into blender and puree until its your desired texture

    The recipe needs some tweaking: more milk? less strawberries? add lemon juice? I am not exactly sure what it needs but I will play around with it until I get it just right.

    This quick and easy breakfast idea came from my bff Meredith. I visited her last weekened and on Sunday morning she offered to make smoothies for breakfast. I declined, she was making peanut butter and bananas (I hate bananas) but the idea is still great.

    After my smoothie I plan to take the pups for a nice, long walk and enjoy the cooler weather and wind that is blowing outside.

    Wake me up before you go go

    I have been wondering for a while (since I started my big girl jobs back in 2005) when waking up for work would get easier. I have had 3 jobs since college and they all started at different times, between 7:30am and 8:15am. The last two mornings I have woken up before my alarm went off...yeah! I am wondering how long this will last before I go back to hitting snooze for 30 minutes before getting out of bed. Any suggestions??

    TLV Fever

    The start of our annual vacation to NH should have started today, Mark and I opted out this year to save money and vacation time at work.  Wishing all of our TLV family an amazing two weeks in NH full of good weather, golf, tennis and rocking.

    New vs Old

    In terms of houses... the two biggest decision (I think) is new house or old house and second: location, location, location. Mark and I are starting the house hunting process and we are looking to buy for our future, something we can grow into. There are only a few must haves: nice size backyard with option for 6' privacy fence and 4 bedrooms/2 story.  We have been looking online and have taken tours of two new neighborhoods in Steele Creek. I like the idea of living in a house that no one else has ever lived in and we can design the home exactly the way we want it from paint color to the elevation. A few things I am not so sure about are the areas where these new communities are popping up. The plus of an older home is that it will be in an established neighborhood/community and the minus with an older home is the possibilty for updates. I am very overwhelmed by the whole process and its just begun. Help please!

    Our puppies

    We got Opie in August of 2010 at 9 weeks old. We had talked about getting a dog and discussed different breeds we were interested in, went back and forth on rescue versus getting a puppy from a breeder, etc. While on our annual week long vacation in New Hampshire last august, my brother, who is a first grade teacher (and not on vacation because school here starts so early!) texted me a picture of a few puppies that the maintenance man at his school was giving away to a good home. We flew back into Charlotte on Thursday around 5:00pm, (early, because I was in a wedding that Saturday with the rehearsal dinner on Friday) met Opie and 2 of his brother’s in a Target parking lot and fell in love and took him home right then and there without even a leash.  We promptly went across the street to PetSmart and got the essentials and convinced Mark’s parents to watch him the next two days while we participated in the wedding activities. Opie is gentle, loving, smart and obedient, he loves to kiss and snuggle (his prefers little spoon); he has been a great puppy (no biting or chewing). I always said “I will never sleep with a dog in my bed” and “I don’t want dogs on my couch”, Opie spent the first 6 months bundled up at my feet every night and I regularly lose my spot on the couch if I get up for a bathroom break or to get dessert.

    One Monday night in February while taking Opie to PetSmart for puppy class, we met Jax; he was born November 16, 2011, and was found living outside in the middle of winter.  I fell in love with his cute little face and “convinced” Mark to bring him home with us…that night! When I say “convinced” imagine me holding 10 pound Jax in front of Mark saying “Isn’t he so cute, can we take him home?” and his response, “If that’s what you want, sure.” The first few weeks were a little rough but Opie and Jax became fast friends and now they are brothers.  Jax has been a little been more difficult of a puppy than Opie was. He is mischievous, goofy, stubborn and playful. Jax has brought out a fun and playful side to Opie and its hilarious to watch the two of them interact. We have loved (almost) every minute of having 2 dogs.

    My little sister pointed out to me a few months ago, that I am like those annoying parents who take pictures and post about their kids all the time. I promise to try to keep my stories entertaining.

    My very first blog post

    This was written about 3 weeks ago but I have been having some technical difficulties and am just not getting around to posting this...

    “Why did you start a blog and what’s it about?” Mark asked me that today while making dinner (he was making dinner, I was typing). It seems like everyone is reading and writing blogs and until a week ago, I wasn’t doing either. I posted on Facebook, “What’s your favorite blog?” and got an overwhelming response from friends with their favorites. I spent the last week checking out each and every one of their suggestions and decided that I wanted to start writing a blog. So, here we are.

    I figured what better way to expand my mind and interests than read information on a lot of different subjects from people who are living it everyday (an not getting paid to write about it).My sudden interest in blogs is part of why I decided to write one. The countdown to 30 is on; May 12, 2012.  I have a “bucket list” of sorts, things I want to do, subjects I want to learn more about, things I hope to be better at, etc. before I turn 30. The list is both realistic and completely irrational.  This blog is going to be my journey through them all. I am hoping to get some clarity from writing, and great ideas and encouragement from readers.
